08/04/14: Waste Into Jerky

What is salty, chewy and generally made with beef? Jerky…. and the making of it is not restricted to red meat according to Kevin Rogers in Australia’s Northern Territory who is now producing Barramundi jerky.

He says the idea came about when he realized useable fish meat was being thrown out by a local business. A successful formula was not immediately found as Barramundi is not as porous as beef and that meant recipe experimentation.

What is currently a home-made item could become an important offshoot of the Barramundi farming in the future according to other experts.
